Before irrigation systems and intensive agriculture, farmers learned to understand the land.
In southern Tunisia, one of those traditions is known as Baali.
Baali is dry farming.
Rather than depending upon continuous artificial irrigation, olive trees rely largely upon natural rainfall and the moisture retained within the soil.
It requires patience. The trees experience the seasons as nature intended. Their roots reach deep into the earth in search of water and nutrients, adapting to an environment shaped by heat and scarcity. It is an old way of farming, but in many respects it feels remarkably relevant today. Less intervention. Respect for natural resources.

Subtle yet distinctive, thyme brings an earthy, slightly minty note to olive oil that few herbs can replicate — and this Fresh Crushed Thyme Extra Virgin Olive Oil captures it using true agrumato-style pressing. Fresh thyme sprigs are crushed together with olives during the milling process itself, rather than infused…

I've tried a lot of olive oils over the years, but this one actually tastes like something. It's got a real peppery kick at the back of the throat that you only get from good, fresh oil. Now it's the only bottle I keep on my counter, and I drizzle it on everything from eggs to roasted vegetables.
What sold me was the color and smell straight out of the bottle — deep green, grassy, almost like fresh-cut herbs. You can genuinely taste the difference in a simple salad or a piece of bread. It doesn't sit heavy either, which I really appreciate for everyday cooking.
I switched to this after reading about polyphenol content and I'm honestly glad I did. It doesn't have that flat, greasy taste some oils have — there's real character to it. My family has noticed the difference in our meals, and I don't think I'll go back to the supermarket brand.
Bought a bottle as a gift for my mother and ended up ordering one for myself right after. The quality is obvious from the first pour — smooth, rich, and not at all bitter. It's become part of our weekly cooking routine, and it's now the only oil I recommend to friends.
